The AMANI-NO-MEGUMI Beef project was initiated by the members of Nichirei Fresh, who are great lovers of beef, with the desire to develop earth-friendly beef and to raise cattle in an environmentally friendly manner.
Nearly 15 years have passed since the start of the project, and during this period we have received many happy comments such as, "When it comes to eating beef, this is the meat I want!” or “I can eat more beef than I have ever eaten before!”
In this issue, we would like to share with you the secret of its delicious taste.

Refreshing flavor and tender meat. What is the secret?

AMANI-NO-MEGUMI Beef is a friendly to the global environment beef and contributes to human health and the future of food.
There is yet another reasons why this beef has been well received by so many people.

Mr. Igarashi of Shikishima Farm, who is involved in the integrated breeding and fattening of Japanese Black Wagyu and has also been helping us raise our cattles by using flaxseed-derived feed, told us about the difference in taste.

One of the characteristics of AMANI-NO-MEGUMI Beef is its fat, which has a faintly sweet, fruit-like scent. In addition, the low melting point of the fat makes it easy to dissolve, allowing you to enjoy its pleasant texture. When cooked with other ingredients, the aromatic and light fat melts out, making it the best beef to enjoy the delicious meat without disturbing the flavor of the dish.

As they continued their research, the project members were surprised to learn that feeding flaxseed to mother cattles that had experienced pregnancy and childbirth (delivered cow) significantly improved their flavor.

It has been said that delivered cows fattened on flaxseed have a particularly richer and tastier flavor. To investigate the cause, the Nichirei Food Safety Center conducted an amino acid score analysis and found that the "free amino acids" related to sweetness tended to be higher than those of ordinary cattle. Since delivered cows have less fat and more lean meat, it can also meet the need for lean meat, which has been increasing in recent years.

We have also received many comments that AMANI-NO-MEGUMI Beef is refreshing, and you can eat a lot of it without getting sick to your stomach. The reason for this, Kondo says, may lie in the quality of the fat.

We believe that the reason why AMANI-NO-MEGUMI Beef is less likely to stomach upset is because the melting point of the fat is low and it does not harden easily. In other words, the fat does not harden in the human body when the beef is digested, which means that people can eat a lot of it without stomach upsets. In the future, we would like to find out this mechanism as well too.

Delivering each cattle to the table with love and care

Flax is grown in cold regions such as Canada, Kazakhstan, and Russia overseas, and in Hokkaido in Japan.

The seeds are pressed for oil, imported, and processed into a powder by using the proprietary technology of our partners TAIYO YUSHI and Tsuji Oil Mills, and this is the feed for AMANI-NO-MEGUMI Beef. The powdered form makes it easy for cattles to eat and for us humans to handle.

In order to deliver AMANI-NO-MEGUMI Beef, the farmers who raise the cattle are also indispensable. Each cattles are carefully raised by the farmers who put their heart and souls into each one of them.

In our pursuit of cattle health, an important aspect of integrated breeding, we came across to flaxseed feed sold by Nichirei Fresh. We were particularly interested in the fact that flaxseed are rich in omega-3 fatty acids, one of the essential fatty acid that are vital for maintaining life and health. This is an important nutrient for both cattles and humans and has a variety of benefits for health maintenance. This is why we started using it on a trial basis, and we continue to use it to this day.



What we value when raising cattles is to love them. Just as we do with humans, we conduct blood and bacteria tests on cattles on a regular basis to make sure there are no problems with their health or the environment in which they are raised.

In addition, Shikishima Farm carefully manages the rearing of mother cattle prior to calving using data to ensure the birth and growth of healthy calves. The farm also uses environmentally friendly breeding methods, such as examining the genes of fattening cattles to understand their abilities and using the data to determine the appropriate and early shipping time, rather than simply shipping cattles early based only on a sense of feeling.

Looking for new possibilities of flaxseed

The members of Nichirei Fresh had one important thing in mind when obtaining cooperation from production farmers. That is, to visit the farmers directly and inform them the guidance on proper feed practices and explaine the value of the product. By communicating directly with them, we hope that the farmers who raise AMANI-NO-MEGUMI Beef will be able to fatten their cattles with a conviction of the value of the product.

In a sense, it is a challenge to feed flaxseed, a new feed, to the cows that have been carefully raised by the farmers. We are very grateful that everyone understands the value of flaxseed and takes great care in raising their cattles.

Matsubara says there must still be new possibilities for this beef that uses such flaxseed-derived ingredients.

We believe that providing flaxseed-based feed to pregnant cattle could positively influence the health and development of their calves. Through flaxseed, we hope to contribute to the well-being of cattle throughout every stage of their lives.

The fatty acid calcium in flaxseed can efficiently supply energy to cattles. We believe this will lead to improved growth performance and help reduce production costs.

Producers and consumers are not the only ones who appreciate the AMANI-NO-MEGUMI series that Nichirei Fresh has been working on for nearly 30 years. In the "Ask Doctors Evaluation Service,” in which Japanese physicians objectively evaluate products and services, 98% of 100 physicians rated our products as highly recommended.
